LION KING RECIPES - From Disney Recipes, by Ira. L. Meyer

Simba's Seared Filet of Beef - Nala's Golden Risotto - Timon and Pumbaa's Potatoes with Carmelized Onions - Rafiki's Coconut Drink

SIMBA'S SEARED FILLET OF BEEF

Serves: 4    Prep Time: 45 minutes

Ingredients:

1 tsp. ground cumin

1/2 tsp. ground cinnamon

1/2 tsp. salt

1/2 tsp. cayenne pepper

1/2 tsp. sugar

1 lb. (4 portions) beef tenderloin, trimmed of all fat, center cut

1 lb. spinach, washed and stemmed

3 tbs. olive oil

1 onion, thinly sliced

salt and pepper to taste

2 oz. peanuts, roasted and crushed

1 lemon, cut into 4 wedges

PREPARATION

Combine ground cumin, cinnamon, salt, cayenne pepper, and salt; then use to coat the four pieces of tenderloin. Heat a cast-iron pan until very hot. Wash spinach and drain well. Heat 2 tablespoons olive oil in a nonstick pan until very hot. Saute sliced onion until brown and beginning to crisp, about 10-12 minutes. Coat hot cast-iron skillet lightly with 1 tablespoon olive oil. Cook steaks on one side, without moving, for about 5 minutes; then flip and cook an additional 4 minutes. Remove from pan and set aside while finishing garnish. When onions are done, remove from oil and drain on a paper towel-lined plate. Placed cleaned spinach in same pan onions were cooked in. Cover and cook with only the residual water on leaves. Remove cover after 1-2 minutes, and flip spinach until just wilted. Season to taste with salt and pepper. Divide fried onions and spinach evenly among four plates. Place a fillet partially over each spinach portion, pouring any accumulated juices onto the meat. Sprinkle with roasted peanuts and garnish with a wedge of lemon.

NALA'S GOLDEN RISOTTO

Servings: 4   Prep Time: 1 Hour

Ingredients:

6 cups low-salt vegetable broth

1/2 tsp. saffron threads

2 tbs. unsalted butter

2 tbs. extra-virgin olive oil

1 medium onion, finely diced

1 lb Arborio rice

1/2 cup dry white wine

3 oz. Parmesan cheese, freshly grated

1 piece edible gold (Available in specialty gourmet shops and fine bakeries)

salt and pepper to taste

PREPARATION

Brind vegetable broth and saffron to a boil; then reduce to a simmer and proceed to the next step. Melt 1 ounce of butter and olive oil in a pan. When butter begins to sizzle, add onion and saute until translucent. Add rice and saute until coated and somewhat translucent, about 5-6 minutes. Slowly add wine. Stir in a single direction until most of the wine has evaporated. Add a ladleful of stock. Continue to stir in the same direction until incorporated. Do not add more stock until the previous amount has been completely absorbed. Continue until all the stock has been user and/or the rice is al dente, about 15-20 minutes from the start. Remove pot from heat and add final ounce of butter and Parmesan cheese. Shred the "gold" over the top just before serving.

TIMON AND PUMBAA'S POTATOES WITH CARAMELIZED ONIONS

Servings: 4  Prep Time: 1 hour

Ingredients:

1 1/2 lbs. russett potatoes, washed well

1/2 cup extra-virgin olive oil

8 oz. onions, peeled

salt and pepper to taste

PREPARATION

Preheat oven to 350 degrees F. Place scrubbed potatoes in oven, directly on rack. Bake for about 30 minutes. Meanwhile, heat olive oil in a large nonstick pan. Dice onions into 1-inch cubes, place in hot oil, and reduce temperature to medium. Continue to cook, uncovered, until they are deeply caramelized, the color of tea. This should also take about 30 minutes. When potatoes yield a bit, remove from oven and allow to cool. Slice cooled potatoes thickly, add to onion mixture, and toss lightly. Cook, partially covered, until potatoes are done and a bit crispy, 10-12 minutes. Add a bit more olive oil if potatoes are sticking. Do not move them too much, or you will have potato hash. Season with salt and pepper to taste.

RAFIKI'S COCONUT DRINK

Servings: 4   Prep Time: 30 minutes

Ingredients:

4 coconuts, green young type

4 tsps. sugar

1 lime, juice only

1 banana, peeled and chunked

1 piece gingerroot, 1/4 inch thick

1 lime, quartered

1 sheet edible gold (optional)

PREPARATION:

Carefully cut off the top of each coconut with a very sharp knife to create great coconut shell tumblers. Pour juice from all coconuts through a strainer into a bowl. In a blender combine coconut juice, sugar, lime juice, banana, gingerroot, and pineapple juice until smooth. Add 6 ounces of ice and continue to process until smooth. Pour back into coconut shell tumblers. Garnish with a long straw and a wedge of lime. Optional garnish: edible gold crushed into a fine powder and sprinkled on top of the drinks.
